Include audio in Output file: Check this option to include audio in the output file so when you play the output file, the audio will be played. And then you can change audio settings. When you select a profile with mp3, this option is grey, which is to make sure that you include the audio in the output file, and the audio settings can be changed. When the source file does not contain audio data, this option is grayed out.
Audio Codec: Select an audio codec for the output file, if other options are available.
Bit Rate: Select a proper bit rate for your audio data, if other options are available.
Sample Rate: Select a proper sample rate for your audio data, if other options are available.
Channels: Select an audio channel for your audio data. Two types are available generally, mono and standard stereo. In profile for 3GP with amr audio codec, only "mono" is available. When you select MPEG as export type and select a DVD option in sub-type, "ac3 channel" is the only option.
Rip Audio to File: Check this option and then you can specify a folder on your hard disc to save the audio as a separate file. The mp3 and pcm formats are available.
